Rasmadhuri

Ingredients:

  • Cottage cheese - 1 Kg.
  • Wheat flour - 500 gm.
  • Sugar - 500 gm.
  • Cardamon powder.

Method:

Prepare sugar syrup. Mix cheese with flour and prepare a very soft dough. Make small ballls and fry them. Dip the balls in the hot sugar syrup. After heating them for sometime, put them in a sugar sprinkled tray. After they gets covered with sugar remove and sprinkle cardamon powder over them.

Sitabhog

Ingredients:

  • Cottage cheese - 200 gm.
  • Wheat flour - 250 gm.
  • Sugar - 500 gm.
  • Clarified butter - 200 gm.

Method:

Mix flour and 50 gm. of butter throughly. Them mix cheese with the mixture and prepare a fine mixture. Now take the rest of butter in a pan and heat it. Take a mesh or an iron net over the pan, take some of the mixture in your hand and press and rub it against the net. Small droplets of the mixture will start coming out of the net which should be fried in a low heat. Then remove those droplets from the pan with the help of a strainer. Prepare a sugar syrup and put those droplets in a the syrup. Remove them after sometime.

Mihidana

Ingredients:

  • Gram flour - 500 gm.
  • Wheat flour - 300 gm.
  • Sugar - 500 gm.
  • Clarified butter for frying.
  • Water for making paste.

Method:

Mix gram flour with wheat flour, then pour some water and make a thick paste. Take clarified butter in a pan and heat it. Take a mesh or an iron net over the pan. Take some paste and press and rub it against the net. Small droplets starts coming out the net. Fry those droplets and dip them in the sugar syrup. Remove them after sometime.

Mango's burfi

Ingredients:

  • Ripe mango's syrup - 1 lit.
  • Nuts, Pistachio and Raisins.
  • Sugar(according to the degree of sweetness of the juice.)
  • Clarified butter - 50 gm.
  • Cardamon powder

Method:

Thicken the mango syrup to half a litre by heating. Then mix it with dry fruits and sugar. Pour the butter into the syrup.When the mixture turns to a thick paste remove it from heatand sprinkle some cardamon powder over it. Then stirr the mixture properly. Spread some butter on a dish and then pour the paste on it. When it gets cooled cut it in the shape of burfi's.

Besan Ka Laddoo

Besan Ka Laddoo is an all-time favourite and made on several special occasions and festivals. The trick to getting this sweet right is in browning the besan (gram flour) perfectly.

Ingredients:

  • 4 cups besan (bengal gram flour)
  • 2 cups ghee (clarified butter)
  • 2 cups powdered sugar
  • 1 tbsp cardamom powder

Method:

  • Melt the ghee over a medium flame, in a thick-bottomed pan.
  • Add the besan and brown till you get a cooked aroma from it. The besan will also turn darker as it cooks and when done should be a deep golden brown color. This browning process can take up roughly 20 minutes.
  • Add the cardamom and mix well.
  • Turn off the fire and mix in the powdered sugar. Stir well.
  • Allow the mix to cool.
  • When cool, form into golf ball-sized rounds. Place on a lightly greased, flat tray till they set well.
  • Store in an air-tight container in a cool place.

Badam's Burfi

Ingredients:

  • Dressed badam/nuts - 500 gm.
  • Thickened milk - 250 gm.
  • Sugar - 500 gm.
  • Clarified butter - 50 gm.
  • Cardamon powder.

Method:

Make a powder of the nuts. Fry the powder in butter. Mix thickened milk and cardamon powder with the fried powder. Now pour a syrup of the sugar into the minxre. Stirr the mixture continuosly. When the mixture turns into a thick paste then pour it into a large dish and spread it evenly. Cut it into small pieces after it gets cooled.
