SABOODANA KHICHRI
Serves 2
1 cup saboodana (sago) - soaked for 1-1½ hours in ¼ cup water
1 medium potato - boiled, peeled & cut into small pieces
3-4 tbsp ghee / oil
¾ tsp jeera seeds
2-3 green chillies - chopped
¼ cup peanuts (without skin) - very coarsely pounded
1¼ tsp salt (adjust to taste)
¼ tsp red chilli powder (optional)
juice of 1 lemon
1 tsp sugar (optional)
Garnishing
Some chopped fresh coriander leaves (optional)
1. Wash saboodana in water 2-3 times. Drain out water. Add ¼ cup water only and keep aside for 1-1½ hours. Saboodana will soak the water & swell up. Do not soak in too much water as the saboodana will get mushy.

2. Heat ghee/oil in a kadhai. Add jeera. When brown, add green chillies and peanuts. Fry till light brown.

3. Add chopped boiled potato. Fry for 1-2 minutes.

4. Add salt, red chilli powder (if using) and lemon juice.

5. Lastly add saboodana. Mix well. Cook on low heat for 1-2 minutes.

6. Serve hot, garnished with fresh chopped coriander leaves (if using)



Note : 1 tsp of sugar can also be added if you like a sweet and sour taste.
