MUTHIA
Gives 15-16 pieces


MUTHIA

¾ cup grated pumpkin (laal kaddu)
½ cup singhare ka atta
1 tsp ginger paste
1 tsp green chilli paste or 6-7 green chillies - finely chopped
1 tsp salt

TADKA (BAGHAR)
1 tbsp pure ghee
2-3 green chillies - chopped
1 tsp jeera seeds


1. Make a dough with ingredients for muthia. Use little water if needed. Dough should be medium, not very hard not soft.

2. Make 3 long rolls.

3. Keep a pan of water on the gas. When the water boils, keep a greased sieve on it & place the rolls in it. Cover.

4. Steam for 15-18 minutes. When a knife inserted in the rolls comes out clean, remove from heat. Uncover & let it cool.

5. Cut into ½" thick pieces.

6. In a kadhai, heat ghee, add green chillies & jeera. When jeera splutters, add muthia pieces. Cook 1-2 minutes.

7. To serve, insert tooth picks in individual pieces & place on the serving plate.
